All fees are due before bottles can be shipped.
At Baoilleach Distillery's we love fortified wines, Peat, and Potstill mash bills, we will mature a cask of Irish Whiskey containing all three. We will fill a Ex - Pedro Ximénez cask, the cask will be 225L, the spirit is now produced and we are waiting on the cask to be delivered. The cask has since arrived and was filled on 09/03/2025.
The cask was late as there have been transport issues arising from damage at Hollyhead Port
We will mash a 4-3-2-1 mash bill, 4 parts Peated Malt, 3 parts Green Barley, 2 parts Oats and 1 part Rye. The wort will have a week long fermentation. It will be slowly, double distilled for maximum flavour in our Irish Whiskey New Make.
Oat 20%
Rye 10%
Malt Barley 40%
Green Barley 30%
Each share will represent 9 x 700ml cask strength bottles from the cask, we expect the cask to be bottled in 3-5 years.
Additional fees will be due after the dumping and bottling of the cask.
