Made from 100% Blackstrap Cane Molasses, the fermentation was in true Caribbean style with backset and Dundee pit fermentation to bring maximum flavour and esters into this double Potstill distilled 3 and half years old aged Dark Rum.
Aged on-site at Baoilleach Distillery for 3 years and 6 months. Aged in a Sherry Seasoned Virgin Oak 50L Cask which had a heavy char. The Sherry influence is quite subtle due to the enormously flavoursome impact of the 100% blacktrap molasses Rum.
